
Spicy Beef Noodle Soup (High-Protein Bodybuilding)

Ingredients
- 200g Ground beef, 90% lean, raw
- 85g Instant ramen noodles, dry
- 100g Raw napa cabbage
- 80g Lion's mane mushroom
- 20g Sriracha chili sauce
- 15g Garlic, raw
- 30g Raw green onions
- 20g Raw jalapeno peppers, seeded
- 80g Raw bok choy
Method
- 1Bring 480ml (2 cups) of water to a boil in a large pot over medium-high heat.
- 2While water heats, heat a non-stick skillet or wok over medium-high heat (no oil needed). Add the 200g ground beef (90% lean) and break it up with a spoon as it cooks. Cook for 4-5 minutes until browned and cooked through. Drain any excess fat if needed.
- 3Add the minced garlic (15g) and minced fresh ginger (about 10g) to the cooked beef. Stir constantly for 30-60 seconds until fragrant. Set aside.
- 4Once the water boils, carefully add the instant ramen noodles (1 package, 85g) directly to the pot. Stir immediately to break apart and prevent clumping. Cook for 3 minutes until noodles are soft and pliable.
- 5Add the cooked beef mixture to the pot with the noodles.
- 6Stir in the sriracha chili sauce (20g) and soy sauce (about 15ml/1 tablespoon) directly into the broth. Mix well until the sauce is evenly distributed and the broth turns a rich reddish-brown color.
- 7Add the diced raw bok choy (80g) and raw napa cabbage (100g) to the pot. These will wilt slightly in the hot broth while maintaining their texture—this should take about 1-2 minutes.
- 8Add the diced raw jalapeno peppers (20g) and sliced lion's mane mushroom (80g). Stir to combine and cook for another 1 minute.
- 9Taste the broth. Adjust spice level by adding more sriracha (if you like it hotter), or salt if needed.
- 10Pour the entire contents into a large bowl. Garnish generously with the chopped raw green onions (30g), which will add a fresh onion bite to the spicy, savory broth.
- 11Serve immediately while steaming hot. Eat the noodles and beef chunks with chopsticks or a fork, and drink the broth with a spoon.
