Ingredients
- 200g Raw wild-caught sockeye salmon
- 30g Raw green onions
- 100g Shiitake mushroom
- 140g Buckwheat, whole grain
- 15g Creamy sesame butter
Method
- 1Cook buckwheat noodles: Bring a pot of salted water to boil. Add 140g dry buckwheat and cook for 10-12 minutes until tender but not mushy. Drain well and set aside.
- 2Prepare teriyaki sauce: While buckwheat cooks, whisk together 3 tablespoons low-sodium soy sauce, 1 tablespoon mirin (or honey), 1 teaspoon fresh grated ginger, 1 minced garlic clove, and 1 teaspoon rice vinegar. Set aside.
- 3Cook mushrooms: Heat a large non-stick skillet over medium-high heat. Add 100g sliced shiitake mushrooms and sauté dry (no oil needed) for 4-5 minutes, stirring occasionally, until they release moisture and become golden. Season lightly with salt. Transfer to a plate.
- 4Sear salmon: In the same skillet, place 200g wild-caught salmon fillet (skin-side down if available) over medium-high heat. Cook for 4-5 minutes until skin is crispy. Flip and cook another 3-4 minutes until the internal temperature reaches 145°F (63°C). The salmon should flake easily with a fork.
- 5Apply teriyaki glaze: Pour the prepared teriyaki sauce over the cooked salmon. Gently tilt the pan to coat the fish evenly. Cook for 30 seconds, allowing the sauce to caramelize slightly on the salmon.
- 6Assemble the dish: Place cooked buckwheat noodles in a serving bowl. Top with the teriyaki-glazed salmon fillet. Arrange sautéed shiitake mushrooms around the salmon. Drizzle 1 tablespoon sesame butter over the noodles and salmon (thin stream—it goes a long way).
- 7Garnish and serve: Top with fresh chopped green onions (30g total). If desired, sprinkle additional sesame seeds on top. Serve immediately while warm.
