Ingredients

  • 80g Old fashioned rolled oats
  • 150g Raw pie pumpkin
  • 156g Greek yogurt, plain, nonfat
  • 30g Pumpkin seeds, raw
  • 240g Unsweetened oat milk
  • 151g Egg
  • 4g Granulated sugar

Method

  1. 1Pour 240ml unsweetened oat milk into a medium saucepan and bring to a gentle simmer over medium heat.
  2. 2Add 80g old fashioned rolled oats and stir continuously to prevent lumps. Reduce heat to medium-low and cook for 4-5 minutes, stirring frequently to achieve a creamy consistency.
  3. 3Stir in 150g raw pie pumpkin (fresh or canned puree) until fully combined. Add 1 teaspoon of vanilla extract if available, and season with warming spices: 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and a pinch of ginger. These spices create authentic pumpkin pie flavor.
  4. 4Continue cooking the oatmeal for 2-3 more minutes until it reaches your desired thickness. If too thick, add a splash more oat milk. Stir in 1 teaspoon granulated sugar or sweeten to taste with stevia/honey.
  5. 5Transfer the oatmeal to a large bowl and top with the Greek yogurt (156g) and raw pumpkin seeds (30g). Stir the yogurt in to create a creamy texture, or leave on top for contrast.
  6. 6While the oatmeal finishes, heat a non-stick skillet or griddle over medium heat (no oil needed - use cooking spray).
  7. 7Crack 3 whole eggs into a bowl, whisk vigorously for 15 seconds until yolks and whites are fully combined. Season lightly with salt and black pepper.
  8. 8Pour the egg mixture into the hot skillet. Let sit undisturbed for 10-15 seconds, then gently push the eggs toward the center of the pan using a silicone spatula. Let sit for another 10-15 seconds and repeat this motion until large soft curds form, about 3-4 minutes total.
  9. 9Stop stirring when eggs are mostly cooked but still slightly wet (they'll continue cooking from residual heat). Transfer to a plate immediately.
  10. 10Serve the pumpkin spice oatmeal in a bowl with the scrambled eggs on the side. Top the oatmeal with the pumpkin seeds and a light drizzle of cinnamon on top for presentation.

  12. 12**Pro tip:** Scramble the eggs in a separate pan while the oatmeal cooks to save time. You can also meal prep this by portioning the cooked oatmeal into containers and reheating with a splash of milk in the microwave.
