
High-Protein Prawn and Chorizo Rice

Ingredients
- 200g Raw shrimp
- 161g Cooked pork chorizo
- 180g White rice, long grain, raw
- 150g Raw bok choy
- 60g Raw white onions
Method
- 1Cook the rice: Rinse 180g of white rice under cold water until water runs clear. Add rice to a pot with 360ml of water (2:1 ratio). Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed and rice is tender. Fluff with a fork and set aside.
- 2Prepare ingredients: Pat 200g of raw shrimp dry with paper towels and season with salt and pepper. Dice the 60g of white onions. Cut the 150g of bok choy into bite-sized pieces, separating leaves from stems. Cut 2 medium chorizo links into thin rounds (approximately 1cm thickness).
- 3Cook the chorizo: Heat a large non-stick skillet or wok over medium-high heat. Add chorizo pieces and cook for 4-5 minutes, stirring occasionally, until browned and fat is rendered. The chorizo will release natural oils for cooking. Remove chorizo and set aside on a paper towel-lined plate.
- 4Cook the bok choy and onions: In the same pan (keep the chorizo fat), add diced onions and cook for 2-3 minutes until translucent and fragrant. Add bok choy stems first and stir-fry for 2 minutes, then add leaves and cook for another 1-2 minutes until just wilted but still crisp. Season with salt and pepper. Transfer to a plate.
- 5Cook the prawns: Increase heat to high. Once pan is very hot, add the shrimp in a single layer. Cook for 2-3 minutes without moving them to develop color, then flip and cook for another 1-2 minutes until pink and cooked through (prawns should be opaque throughout, not translucent). Do not overcook or they will become tough.
- 6Combine: Return the chorizo and vegetables to the pan with the prawns. Add the cooked rice (it's okay if rice is still warm from cooking). Toss everything together over medium heat for 1-2 minutes to warm through and combine flavors.
- 7Serve: Transfer to a plate immediately. The dish is best served hot. Optional: drizzle with a small amount of soy sauce or add fresh lime juice for brightness.
