
Spicy Shrimp Ramen Noodles

Ingredients
- 85g Instant ramen noodles, dry
- 15g Sriracha chili sauce
- 150g Raw shrimp
- 100g Raw bok choy
- 20g Raw jalapeno peppers, seeded
Method
- 1Fill a medium pot with 2 cups of water and bring to a boil over high heat (about 3 minutes).
- 2While water heats, pat the raw shrimp dry with paper towels and remove the vein if present. Roughly chop the bok choy into bite-sized pieces and slice the jalapeño peppers thinly.
- 3Once water is boiling, carefully add the ramen noodle block (discard any included seasoning packet). Stir immediately to separate the noodles and cook for 3-4 minutes, stirring occasionally, until noodles are al dente (slightly firm).
- 4Add the shrimp directly to the pot and stir. The shrimp will start to cook immediately. Cook for 2 minutes.
- 5Add the chopped bok choy to the pot and stir well. Cook for another 1-2 minutes until the shrimp turns completely pink/opaque and the bok choy becomes tender-crisp.
- 6Remove from heat and stir in the sriracha chili sauce (3 teaspoons total) until fully combined. Taste and adjust heat to preference.
- 7Add the sliced jalapeño peppers and stir gently to incorporate. Pour the entire mixture (noodles, broth, and vegetables) into a bowl.
- 8Serve immediately while hot. Optional: garnish with additional sliced jalapeños or a squeeze of lime if desired.
- 9Note: The cooking water will be slightly spicy from the noodles and sriracha - this creates the broth base for the dish. Enjoy with chopsticks and a spoon!
