Ingredients

  • 350g Raw gold potatoes without skin
  • 280g Raw ground lamb
  • 15g Salted butter
  • 10g Garlic, raw
  • 80g Yellow onion, raw
  • 5g Iodized table salt

Method

  1. 1Prepare the potatoes: Peel and cut 350g of gold potatoes into 1-inch cubes. Place in a pot of cold water with a pinch of salt. Bring to a boil and cook for 12-15 minutes until fork-tender. Drain and set aside.
  2. 2Brown the lamb: Heat 15g of salted butter in a large skillet over medium-high heat. Once melted and foaming, add 280g of raw ground lamb. Break the meat apart with a wooden spoon and cook for 6-8 minutes, stirring occasionally, until deeply browned on all sides. Drain excess fat if needed.
  3. 3Build the aromatics: Reduce heat to medium. Add 80g of diced yellow onion and cook for 3-4 minutes until softened and translucent. Add 10g of minced garlic and cook for 1-2 minutes until fragrant. Season with 5g of salt and freshly cracked black pepper to taste.

Mash with a potato masher or fork until smooth (leave slightly chunky if preferred). Add 2-3 tablespoons of reserved cooking water or additional butter to achieve desired consistency. Season with salt and pepper.
