Ingredients

Method

  1. 1Preheat oven to 375°F (190°C). Spray a 6-cup muffin tin with cooking spray, ensuring all surfaces are well coated to prevent sticking.

  3. 3In a medium mixing bowl, crack the 4 whole eggs and add the 2 egg whites (269.2g total egg base). Add the ¼ cup milk (61.25g). Whisk vigorously for 60-90 seconds until the mixture is pale yellow, frothy, and well combined. This incorporates air for a lighter, fluffier texture.
