
High-Protein Beef Stir-Fry Noodles with Vegetables

Ingredients
- 200g Beef top round roast, raw
- 128g Instant ramen noodles, dry
- 150g Raw bok choy
- 100g Shiitake mushroom
- 50g Raw jalapeno peppers, seeded
Method
- 1Prepare ingredients: Slice the beef top round into thin strips (¼-inch thick) against the grain. Chop bok choy into 2-inch pieces, slice shiitake mushrooms, and mince jalapeno peppers.
- 2Cook the noodles: Bring a pot of water to a boil. Add 1.5 packages of instant ramen noodles and cook for 3-4 minutes until just tender (do not overcook). Drain and set aside.
- 3Preheat wok or large skillet: Heat a large skillet or wok over high heat for 2-3 minutes until very hot. Use cooking spray to lightly coat the surface.
- 4Sear the beef: Add beef strips to the hot pan in a single layer. Cook undisturbed for 1-2 minutes until the bottom develops a brown crust. Stir and cook for another 1-2 minutes until cooked through (internal temperature 160°F). Transfer to a plate.
- 5Stir-fry vegetables: Spray the pan with cooking spray again. Add shiitake mushrooms and cook for 2 minutes until they release their moisture and begin to brown. Add bok choy and jalapenos, stir-frying for 2-3 minutes until bok choy is tender-crisp but still has a slight bite.
- 6Combine: Return the cooked beef to the pan. Add the drained ramen noodles and toss everything together for 1-2 minutes. The residual heat will warm the noodles evenly.
- 7Season: Add soy sauce (2 tablespoons or approximately 30g) and toss to coat all ingredients. You can also add a splash of water (2-3 tablespoons) if the mixture is too dry. Toss for 30 seconds until everything is evenly coated.
- 8Plate and serve immediately. The entire meal should take about 15 minutes from start to finish.
