
Grilled Chicken Breast with Sweet Potato and Roasted Broccoli

Ingredients
- 180g Raw chicken breast
- 180g Raw orange sweet potatoes without skin
- 152g Raw broccoli
Method
- 1Preheat grill to medium-high heat (around 400°F/200°C) for 5 minutes.
- 2Pat the raw chicken breast dry with paper towels to promote even browning.
- 3Season the chicken breast generously with salt and pepper on both sides (or use your preferred spice blend - garlic powder, paprika, and black pepper work well).
- 4While the grill heats, prepare the sweet potato: wash and pat dry, then prick several times with a fork to allow steam to escape. Wrap loosely in foil.
- 5Place the foil-wrapped sweet potato directly on the grill grates. Close the lid and let it cook for 30-35 minutes, turning halfway through, until a fork pierces the flesh easily.
- 6Once the grill is hot and the sweet potato has been cooking for 10 minutes, place the seasoned chicken breast on the grill. Close the lid.
- 7Grill the chicken for 6-7 minutes without moving it, allowing a golden crust to form. This creates better flavor through the Maillard reaction.
- 8Flip the chicken breast and grill for another 6-7 minutes until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer in the thickest part.
- 9While the chicken and sweet potato finish cooking, prepare the broccoli: rinse the 2 cups of chopped broccoli florets. Bring a large pot of water to a boil.
- 10Add broccoli to boiling water and steam for 4-5 minutes until tender-crisp (it should still have a slight firmness). Do not overcook or it will become mushy.
- 11Drain the broccoli thoroughly in a colander, shaking out excess water.
- 12Once all components are cooked, remove the chicken from the grill and let it rest for 3-4 minutes (this keeps it juicy).
- 13Carefully remove the sweet potato from the grill using tongs. Unwrap the foil and slice the potato in half lengthwise.
- 14Plate the meal: place the grilled chicken breast on the center of the plate, arrange the sweet potato halves alongside, and add the steamed broccoli on the other side.
- 15Optional: Season the hot broccoli with a pinch of salt and black pepper. You can also add a squeeze of fresh lemon juice over the chicken and broccoli for brightness.
- 16Serve immediately while hot.
