
Chicken Korma with Whole-Wheat Naan and Rice

Ingredients
- 180g Raw chicken breast
- 100g White rice, long grain, raw
- 80g Plain Greek yogurt
- 60g Heavy cream
- 15g Garlic, raw
- 100g Raw white onions
- 30g Canned tomato paste
- 110g Whole-wheat bread
Method
- 1Prepare the rice: Measure 100g dry white rice and rinse under cold water until water runs clear. In a pot, bring 200ml water to a boil with a pinch of salt. Add rice, stir once, and reduce heat to low. Cover and simmer for 15-18 minutes until water is absorbed and rice is tender. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
- 2Prepare the chicken: Cut 180g raw chicken breast into 3-4cm cubes. Season with salt and pepper on both sides.
- 3Prepare aromatics: Finely dice 100g white onion and mince 15g fresh garlic.

- 8Make the korma sauce: Slowly add the yogurt-cream mixture to the tomato paste base, stirring constantly to prevent curdling. Add 1 teaspoon each of ground cumin, ground coriander, and turmeric. Add 1/2 teaspoon ginger powder, 1/4 teaspoon cayenne pepper, and salt to taste. Stir until well combined.
