
Cheddar and Mushroom Frittata

Ingredients
- 302g Egg
- 51g Cheddar cheese
- 150g Crimini mushroom
- 50g Yellow onion, raw
- 10g Garlic, raw
Method
- 1Preheat your oven to 400°F (200°C).
- 2Finely dice the onion (about 50g) and mince the garlic (about 10g). Slice the crimini mushrooms into thin pieces (about ¼-inch thick).
- 3Heat an 8-10 inch non-stick or cast iron skillet over medium-high heat. Use cooking spray to coat the pan lightly.
- 4Add the diced onions to the hot pan and sauté for 2-3 minutes until they become translucent and fragrant. Add the minced garlic and cook for another 30 seconds, stirring constantly to prevent burning.
- 5Add the sliced mushrooms to the pan and sauté for 4-5 minutes, stirring occasionally, until they release their moisture and begin to brown slightly. Season with a pinch of salt and pepper. The mushrooms should be tender and any excess liquid should have mostly evaporated.
- 6While the mushrooms cook, crack all 6 eggs into a bowl. Whisk them together vigorously for about 1 minute until the whites and yolks are fully combined and slightly frothy. Season with a pinch of salt and pepper.
- 7Once the mushroom mixture is ready, spread it evenly across the bottom of the skillet. Pour the beaten eggs over the mushrooms, making sure they're distributed evenly. Gently stir for about 30 seconds to combine ingredients slightly, then let it settle.
- 8Crumble or slice the 3 slices of cheddar cheese and scatter it evenly over the top of the eggs.
- 9Cook on the stovetop over medium heat for 2-3 minutes until the edges begin to set and turn light golden, but the center is still quite wet.
- 10Transfer the skillet to the preheated 400°F oven and bake for 10-12 minutes until the top is set and slightly puffed, and a knife inserted in the center comes out clean or with just a few moist crumbs. The top should be light golden.
- 11Remove from the oven and let cool for 1-2 minutes. Slide onto a plate or cut directly in the skillet. Serve immediately while warm.
