Ingredients

  • 200g Raw beef top round
  • 150g Brown rice, long grain, raw
  • 150g Raw napa cabbage
  • 100g Raw leeks

  • 5g Soybean oil
  • 10g Granulated sugar
  • 5g Sriracha chili sauce
  • 20g Raw green onions

Method

  1. 1PREP THE MARINADE (5 minutes): In a small bowl, combine 30g soy sauce, 8g granulated sugar, 15g minced garlic, 5g sriracha chili sauce, and 5g soybean oil. Whisk together until sugar dissolves. Set aside.
  2. 2PREPARE THE BEEF (5 minutes): Take 200g beef top round and place on a cutting board. Partially freeze if possible (30 minutes) to make slicing easier. Using a sharp knife, slice the beef thinly against the grain into strips approximately 3-4mm thick. This is critical for tender, quick-cooking bulgogi.
  3. 3MARINATE THE BEEF (10 minutes): Place sliced beef in a bowl or shallow dish. Pour the marinade over the beef and toss gently to coat all pieces evenly. Let sit for 10 minutes at room temperature while you prepare other components.
  4. 4COOK THE BROWN RICE (45 minutes): In a medium pot, bring 375ml water to a boil (use 2.5 parts water to 1 part rice for brown rice). Add 150g brown rice, stir once, and reduce heat to low. Cover with a lid and simmer for 40-45 minutes until rice is tender and water is absorbed. Keep lid on during cooking—do not stir.
  5. 5PREPARE VEGETABLES (5 minutes): While rice cooks, chop 150g napa cabbage into bite-sized pieces, slice 100g leeks into thin half-moons, and finely chop 20g green onions (separate white and green parts). Have 100g napa cabbage kimchi ready in a serving bowl.
  6. 6COOK THE BULGOGI (8 minutes): Heat a large skillet or wok over HIGH heat for 2 minutes until very hot. Working in batches to avoid overcrowding, add the marinated beef with minimal oil. Cook for 2-3 minutes until beef is browned on the edges and cooked through (internal temp 160°F/71°C), stirring frequently. Remove cooked beef to a plate and set aside. The beef should be tender and caramelized.
  7. 7COOK THE VEGETABLES (3 minutes): In the same hot skillet, add the sliced leeks and napa cabbage pieces (reserve for raw kimchi). Stir-fry for 2-3 minutes until leeks are translucent and cabbage is slightly tender but still has a bit of crunch. Season lightly if desired.
  8. 8COMBINE (2 minutes): Return the cooked beef to the skillet with the vegetables. Add the white parts of the chopped green onions and toss to combine. Cook for 1 minute more to warm through.
  9. 9PLATE YOUR MEAL (3 minutes): Place the cooked brown rice on a plate, creating a small well or pile. Top with the bulgogi beef and vegetables.
