
Strawberry Cheesecake Overnight Oats

Ingredients
- 50g Old fashioned rolled oats
- 150g Unsweetened oat milk
- 117g Greek yogurt, plain, nonfat
- 100g Raw strawberries
- 30g Full fat cream cheese
- 6g Granulated sugar
Method
- 1In a mason jar or container, combine 50g of old-fashioned rolled oats and 150ml of unsweetened oat milk. Stir well to combine.
- 2Add 117g of plain nonfat Greek yogurt (0.75 container) to the oat and milk mixture. Stir until the yogurt is fully incorporated and there are no lumps.
- 3Add 30g of full-fat cream cheese to the mixture. Use a fork or small whisk to break up the cream cheese and blend it thoroughly with the yogurt and oats until smooth and creamy. This creates the signature cheesecake flavor.
- 4Chop 100g of fresh raw strawberries into small pieces. Reserve about 15g of the best-looking pieces for topping, and fold the remaining strawberries into the oats mixture.
- 5Add 1.5 teaspoons (6g) of granulated sugar to the mixture and stir well to distribute evenly and enhance the strawberry flavor.
- 6Cover the jar or container with a lid and refrigerate for at least 4 hours, or preferably overnight (6-8 hours). This allows the oats to soften and absorb the creamy mixture.
- 7In the morning, remove from refrigerator. If the oats are too thick, add 1-2 tablespoons of oat milk to reach your desired consistency. Stir well.
- 8Top with the reserved fresh strawberry pieces and serve chilled directly from the jar. You can eat it straight from the jar or transfer to a bowl if preferred.
