Ingredients
- 200g Raw beef top round
- 75g White rice, long grain, raw
- 150g Shiitake mushroom
- 200g Raw bok choy
Method
- 1Cook rice: Combine 75g white rice with 150ml water in a rice cooker or pot. Bring to boil, cover, reduce heat to low, and simmer for 15-18 minutes until water is absorbed. Fluff with fork.
- 2Prepare beef: Remove 200g beef top round from packaging. Pat dry with paper towels. Slice against the grain into thin strips (about 1/4-inch thick) for better texture and quicker cooking. Season lightly with salt and black pepper.
- 3Make teriyaki sauce: While rice cooks, combine in a small bowl: 2 tablespoons low-sodium soy sauce, 1 tablespoon mirin or honey, 1 teaspoon rice vinegar, 1/2 teaspoon ginger powder, and 1/2 teaspoon minced garlic. Stir until well combined. Set aside.
- 4Prepare vegetables: Clean shiitake mushrooms and slice into 1/4-inch strips (about 150g). Wash bok choy and chop into 2-inch pieces (about 200g). Keep mushrooms and bok choy separate.
- 5Sear beef: Heat a non-stick skillet or wok over high heat (400-450°F). Spray with cooking spray. Once hot, add beef strips in a single layer. Sear for 2-3 minutes per side until browned. Do not overcrowd pan—work in batches if needed. Transfer cooked beef to a plate.
