Ingredients
- 200g Raw top sirloin steak
- 250g Raw orange sweet potatoes without skin
- 100g Baby arugula, raw
- 15g Extra virgin olive oil
- 36g Salsa
Method
- 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2Cut the orange sweet potato into 1-inch cubes (about 250g). Toss lightly with a pinch of salt and pepper. Spread on the baking sheet in a single layer and roast for 20-25 minutes, stirring halfway through, until golden and tender. Set aside to cool slightly.
- 3While sweet potatoes roast, remove the sirloin steak from the refrigerator 10-15 minutes before cooking. Pat dry with paper towels and season both sides generously with salt and pepper.
- 4Heat a cast-iron skillet or grill pan over high heat until very hot (about 2-3 minutes). You should see just a wisp of smoke.
- 5Place the steak on the hot skillet and sear for 4-5 minutes on the first side without moving it. Flip and sear for another 3-4 minutes for medium-rare (internal temp 130-135°F). Adjust timing for preferred doneness: 2-3 min per side for rare, 5-6 min per side for medium, 7+ min per side for well-done.
- 6Remove the steak to a cutting board and let rest for 5 minutes. This redistributes the juices and keeps the meat tender.
- 7While the steak rests, place the fresh baby arugula in a large bowl. Drizzle with 15g extra virgin olive oil and add 35.7g (2 tablespoons) of salsa. Toss gently to combine, coating the greens evenly.
- 8Slice the rested sirloin steak against the grain into ½-inch strips (about 15-20 pieces).
- 9Arrange the dressed arugula on a large plate. Top with the sliced steak and roasted sweet potato cubes. Drizzle any remaining salsa and pan juices from the steak over the top.
- 10Serve immediately while the steak is warm and sweet potatoes are still hot.
- 11**Pro Tips:**
- 12- Don't overcrowd the pan when cooking the steak; a good sear creates a flavorful crust
- 13- Let the steak rest—this is essential for tenderness
- 14- For meal prep, cook the sweet potatoes and steak ahead; assemble the salad fresh before eating
- 15- If you prefer a lighter dressing, reduce the olive oil to 10g and add lime juice or balsamic vinegar
