Ingredients

  • 200g Raw ground lamb
  • 150g Raw eggplant
  • 150g Raw zucchini
  • 120g Raw red bell pepper
  • 150g Roma tomato
  • 10g Garlic, raw
  • 80g Raw white onions
  • 100g Canned tomato sauce

Method

  1. 1**Prepare the lamb steak (15 minutes ahead):** Take the 200g ground lamb and form it into a compact steak shape, approximately 1.5 inches thick. Season generously with salt and pepper. Let it sit at room temperature for 10-15 minutes before grilling to ensure even cooking.
  2. 2**Prep the ratatouille vegetables:** Finely dice the eggplant (150g), zucchini (150g), and red bell pepper (120g) into ½-inch cubes for uniform cooking. Chop the Roma tomato (150g) into bite-sized pieces. Mince the garlic (10g) and white onion (80g) separately.
  3. 3**Start the ratatouille base:** Heat a non-stick skillet or grill pan over medium heat with cooking spray. Add the minced onion and garlic, sauté for 2-3 minutes until fragrant and translucent, stirring frequently.
  4. 4**Build the ratatouille layers:** Add the diced eggplant to the pan, cooking for 5 minutes while stirring occasionally. The eggplant will soften slightly. Then add the zucchini and bell pepper, cooking for another 5 minutes until vegetables begin to soften.
  5. 5**Add tomatoes and sauce:** Pour in the canned tomato sauce (100g) and the fresh diced tomatoes. Reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally. The ratatouille should become aromatic and the vegetables should be tender but not mushy. Season with salt and pepper to taste.
  6. 6**Grill the lamb steak:** While the ratatouille simmers, heat a separate grill or grill pan to medium-high heat (around 375-400°F / 190-200°C). Apply cooking spray to prevent sticking. Place the formed lamb steak on the grill.
  7. 7**Cook the lamb:** Grill for 4-5 minutes on the first side without moving it, creating a nice crust. Flip once and cook for another 4-5 minutes for medium-rare doneness (internal temp 130-135°F / 54-57°C). For medium, extend to 5-6 minutes per side. Let rest for 2-3 minutes after cooking.
  8. 8**Finish and plate:** Remove the lamb steak to a cutting board and let rest. Check the ratatouille for consistency—it should be saucy but not watery. If too thin, continue simmering. If too thick, add a splash of water.
  9. 9**Serve:** Plate the lamb steak and spoon the ratatouille alongside or over the top. Optional: garnish with fresh herbs like basil or oregano if available.
  10. 10**Cooking Tips:**
  11. 11- Don't press the lamb while grilling—this releases juices and dries it out
  12. 12- For a crispier exterior, let the pan get very hot before adding the lamb
  13. 13- If your ratatouille is too acidic, a pinch of sugar or longer cooking time balances the flavor
  14. 14- The lamb can be cooked to your preferred doneness; medium-rare is recommended to retain moisture
