- 200g Beef top loin steak, raw
- 250g Raw russet potatoes without skin
- 15g Garlic, raw
- 15g Salted butter
Method
- 1Preheat your oven to 425°F (220°C). Line a baking sheet with foil.
- 2Prepare the potatoes: Wash and cut the russet potatoes into 1-inch cubes (leave skins on for texture and nutrients). Toss with a light spray of cooking spray, salt, and pepper. Spread evenly on one half of the baking sheet.
- 3Roast potatoes: Place in the oven for 20-25 minutes until they begin to soften and develop light browning around the edges.
- 4Prepare the steak: Pat the beef top loin steak dry with paper towels. Season generously with salt and black pepper. Cut into 1.5-inch bite-sized cubes.
- 5Sear the steak: Heat a cast-iron skillet over medium-high heat (no oil needed - the steak has sufficient marbling). Once hot, add steak bites in a single layer. Sear for 2-3 minutes per side until a golden crust forms. Work in batches if needed to avoid crowding. Steak should reach 130-135°F internal temperature for medium-rare.
- 6Make garlic butter: While steak cooks, mince the garlic finely. In the final minute of cooking, reduce heat to medium-low and add butter and minced garlic to the skillet with the steak. Swirl constantly for 60-90 seconds until fragrant and the garlic begins to soften slightly.
- 7Combine and serve: Transfer steak bites and garlic butter to a plate. Add the roasted potatoes (remove from oven when golden). Toss potatoes with any remaining garlic butter from the pan and season with additional salt and pepper as needed.
